The poolish is good - but I miss a couple of important steps in the final dough..the result is OK, but not outstanding...

WE have a busy morning with the kids. Catriona and Matty take them a drive into Milngavie to get some shopping and we get the place tidied up a bit.

They're not long back when Mikey rocks up and we have some lunch.

Mid-afternoon I retrieve the poolish from the fridge and make a big batch of pizza dough for tonight.

I'm not very happy with the dough, though – my notes don't have any kneading and I'm not sure it'll magically smooth itself out while resting. I go back over the video that I took my notes from and although there's not a lot of kneading, there are some folding and pushing steps that I missed out. I go back and try to rescue the dough balls.

Once the kids have gone to bed I fire up the Ooni and we start the pizzas...Mikey throws one of his 'episodes' which kinda screws the night and the pizzas, while OK, aren't my best effort...
