Mincing the pork/spice mix for a batch of Andouille sausage

STRAIGHT onto the inventory of West Highland Way Gifts’ products for the weekend’s community lunch event…

After dyeing the leather stuff I move onto the epoxy ‘experiments’. The paddleboard earrings seem to have attracted some attention and I have a different approach to try…plus some engraved chopping boards.

I mix various colours of epoxy and do my ‘pours’ scraping off the excess to minimise finishing time. A few minutes later I notice that all the engravings are virtually empty of epoxy! Looks like scraped off more than the excess.

The pork shoulder I took out the freezer has defrosted and needs mixed with Prague powder #1, Cajun spice mix and more ‘dry’ ingredients for Andouille sausage…I don’t have enough Cajun spice mix tho’, so end up having to make a batch up. The mixture goes in the fridge for a couple of hours and the blade and die for the mincer go in the freezer.

After lunch I have another go, this time leaving the excess in the hope I’ll be able to sand it down. Previous attempts to do this haven’t worked very well. Time will tell.

Next job it to mince the pork/spice mixture and refrigerate ‘til tomorrow when it’ll be put in skins and smoked.

In between times I get some promo underway for next week’s concert livestream.

Margaret comes home with some shopping and has also picked up a batch of Dave Arcari hoodies form the screen printers.

I get the pizza oven fired up and prep the stuff for the pizzas we’re taking along to Betty and Joe’s. All goes well and we have. Lovely evening. Back home we have another glass of wine in front of the telly. Next thing we wake up on the couch a t 2am.

I make pizzas and we take them along to Betty and Joe 🙂
