THE village shop is almost out of my fridge magnets. There’s a batch needing bagged up so I get on the case before breakfast.
There’s also some merch to be posted – I take a walk to the post box then drop off the magnets at the shop.
Margaret’s taking Betty to see Joe in hospital and will be away at lunchtime. I make another egg, courgette and ricotta roll thing. This one’s much better than my first attempt – i use grease proof paper in the baking tray, make the mix a little thinner and use the suggested ricotta instead of mascarpone (I didn’t have any ricotta last time).
Betty’s coming for dinner later and I’m doing Vietnamese beef on the grill. I make up the marinade and put the beef in to soak up the flavours.
In the office I get some work done then our pal Robert drops by to give me a wee masterclass in stretching pizza dough and generally help me up my game with the Ooni.
I made a batch of dough yesterday – and Robert’s brought up some of his. We have fun making, comparing and I get some valuable tips.
He’s just leaving when Margaret gets back. She’s not had any lunch and there’s still some hot pizza left so we polish it off then i start the rest of the prep for dinner.
Betty arrives just father 8pm and we have a nice relaxed evening.
